The Crazy Earth of Folatières
Folatières is one of Puligny’s great premier crus, and Philippe’s vines are in Au Chaniot - the choicest section, lying on the same contour line as Le Montrachet Grand Cru and Caillerets. The name “Folatières” comes from folles-terres or “crazy earth,” a nod to the rocks cascading down from above during storms, enriching the soils and sharpening the wines.
The 2023 is dazzling: nectarine, peach, pear and green apple, lifted by honeysuckle and white blossom. Flinty minerality runs through, giving definition to a wine that’s both dense and powerful yet glides across the palate with ethereal grace. Sleek, hedonistic and unforgettable. The Plot
Just 0.27 ha of vines planted in 1950, producing around 1,900 bottles in a normal year. Located in the prized lower Au Chaniot section of Folatières, where rockier soils lend extra distinction and finesse.
Technical Details
Hand-harvested Chardonnay, whole-bunch pressed, fermented in tank before finishing malolactic in barrel. Aged 11 months in 228L oak barrels (30% new), with 16 months’ élevage in total. Bottled by hand with the traditional chèvre à deux becs.

A historic domaine in the heart of Puligny-Montrachet, crafting wines from some of the most legendary vineyards on earth.
The Chavy name rings out across Burgundy, synonymous with classically brilliant white wines. Philippe took the reins in 1990, inheriting Puligny parcels from his father (planted in the 1950s) and Meursault from his mother (going all the way back to 1932), with one of Saint-Aubin’s most iconic plots thrown into the mix.
Our Take
This wine completely floored me – so much so I bought a case for myself. The weight is superb, dense in flavour but utterly weightless across the palate. There’s a hedonistic thrill to it, yet with acidity and flinty drive that make it sleek and ethereal. A Folatières of real brilliance. It's impossible to be disappointed by this.

Each bottle is wrapped in tissue before being carefully placed into our specially imported Italian boxes, tested to rigorous standards. We have literally dropped them from the first storey of our house. All our packaging is paper-based and recyclable.
