Domaine Pierrick Bouley’s estate farms 41 micro-parcels based in and around Volnay, some pushing 90 years old. He’s the sixth generation of his family to farm these hills, with the domaine dating back to the 1850’s, but the first to do it like this. Since taking full control of the domaine in 2014, Pierrick has been quietly rewriting the script: no insecticides, no herbicides, no additives, and not a drop of sulphur used in vinification since 2017.
Just old vines, natural ferments, and a whole lot of patience. His vineyard practices are all about respect. For the land, for the vine, and for future generations. Low intervention, high intention. He’s converted fully to organics (certified from 2023), using biodynamic principles, ancient pruning techniques, and a less-is-more approach that lets the terroir speak fluently.

In the cellar, Pierrick plays it just as cool. Whole grapes, native yeast, zero crushing. French oak barrels, a slow élevage, and as little filtration as possible. No tricks, no noise. Just wine that reflects its roots.

Pierrick talks about the domaine, its vineyards and his approach to winemaking, offering a personal insight into the philosophy and character behind the wines.
A closer look at Domaine Pierrick Bouley
Pierrick is deeply committed to sustainable viticulture, drawing inspiration from organic and biodynamic practices. The domaine is organic certified, with the 2023 vintage set to be the first to come under the official label.
In the vineyards, Pierrick employs the “Guyot-Poussard” pruning technique and practices “tressage,” a method of rolling vine shoots instead of trimming, which promotes better grape balance and disease resistance. No insecticides, weed killers, or anti-rot products are applied.

Domaine Pierrick Bouley produces a range of wines, including regional, village, and premier cru appellations in both red and white varieties. Pierrick’s sustainable approach to farming ensures that the wines reflect the individuality of each terroir, with minimal intervention and a commitment to purity.
Through careful management of the vines and soils, he crafts wines that capture the elegance and complexity for which Volnay is renowned, allowing each bottle to tell the story of its origins.
Why we’re excited
Pierrick Bouley is exactly the sort of grower that gets us excited about Burgundy. Old vines, tiny parcels, organic farming and a determination to strip everything back until all that remains is the vineyard speaking clearly.
There’s real purity to these wines, but never at the expense of character. From the charm of the Bourgogne bottlings to the depth and perfume of his Volnay and Premier Crus, the range has that rare combination of energy, precision and sheer drinkability that makes you want to keep going back to the glass.
What makes Pierrick particularly compelling is that the domaine already feels deeply established, yet there is still a sense that we are watching something develop. The wines are becoming more precise, more confident and more expressive, while staying completely rooted in Volnay.
For us, Pierrick is one of those producers where the quality speaks long before the reputation catches up. And that is exactly where we want to be.
