Thibault Morey’s approach is rooted in an extraordinary level of detail, from the vineyard through to the cellar. The domaine is certified organic and works according to biodynamic principles, with hand harvesting, careful pruning and an emphasis on healthy, living soils. The result is a style that combines Chassagne’s natural generosity with freshness, tension and remarkable definition.



The vineyards are at the heart of Morey-Coffinet. The domaine has been certified organic since 2018 and has worked with biodynamic principles since 2015, using composts, horn manure, herbal preparations and horn silica to support the soil and vines. Some of its smallest and most precious parcels, including Les Pucelles and Bâtard-Montrachet, are worked by horse and harvested entirely by hand.


Morey-Coffinet’s wines have breadth and texture, but freshness is always kept firmly in view. Oak is used according to the site, with the village Chassagne normally raised for 11 to 13 months in 228 and 350 litre barrels, while the top Premier and Grand Crus spend longer in 350 litre barrels. For the 2023 Chassagne-Montrachet, part of the wine was raised in clay jars to preserve freshness and tension. The wines are bottled unfiltered.
The domaine’s range stretches from village Chassagne-Montrachet through celebrated Premier Cru vineyards and into the Grand Cru of Bâtard-Montrachet. Its holdings can be exceptionally small: just 0.20 hectares in Puligny-Montrachet Premier Cru Les Pucelles and only 0.13 hectares of Bâtard-Montrachet. Those tiny parcels give Morey-Coffinet access to some of Burgundy’s most extraordinary Chardonnay terroirs.
