There’s real concentration and depth here, but Les Murgers des Dents de Chien never loses the cool, energetic character that makes this terroir so compelling.
Lemon and ripe citrus lead into layers of nectarine and peach, giving the palate substance and generosity without unnecessary weight. The fruit feels concentrated rather than rich, framed by bright acidity and a distinctly chiselled, mineral character.
The 30% new oak adds texture and structure rather than obvious flavour, sitting comfortably behind the fruit and helping build a long, precise finish.
It’s that combination of depth and tension that really stands out. Concentrated, energetic and beautifully controlled, with the freshness of this high-altitude site running through the wine from beginning to end.

The Plot
“Murger” refers to the piles of sharp stones cleared from the rocky soils; “Dents de Chien” means dog’s teeth, a nod to their jagged bite. The vineyard sits high on the slope above En Remilly and east of Montrachet, soaking up the sun but kept in check by the altitude and winds, maintaining freshness and tension.. The terroir here is a mix of clay & limestone. Philippe farms a tiny 0.17 ha parcel, planted in 1985, making him one of the smallest holders in this prized site.
Technical Details
Hand-harvested Chardonnay, whole-bunch pressed, fermented in tank before finishing malolactic in barrel. Aged 11 months in 228L oak barrels, 30% new, then blended and bottled by hand using the traditional chèvre à deux becs. 16 months’ élevage in total. Just 1,300 bottles.

A historic domaine in the heart of Puligny-Montrachet, crafting wines from some of the most legendary vineyards on earth.
The Chavy name rings out across Burgundy, synonymous with classically brilliant white wines. Philippe took the reins in 1990, inheriting Puligny parcels from his father (planted in the 1950s) and Meursault from his mother (going all the way back to 1932), with one of Saint-Aubin’s most iconic plots thrown into the mix.

Perched just above the hallowed slopes of Montrachet Grand Cru, it offers a tantalising taste of the greatness below, yet has no need to stand in anyone’s shadow. Each bottle is wrapped in tissue before being carefully placed into our specially imported Italian boxes, tested to rigorous standards. We have literally dropped them from the first storey of our house. All our packaging is paper-based and recyclable.
