About this Wine
A leaner, tightly wound take on Les Murgers des Dents de Chien. Bright citrus rind and savoury, nutty notes drive the wine, balanced by minerality and fine acidity. Just two barrels were produced in 2021, making this a rare and fascinating snapshot of Saint-Aubin’s crown jewel in a cooler year. Pure minerality and tension. A rare beauty to drink.
Bright and tightly wound, with citrus zest, flint, lime, white pepper, and a pure mineral line.

Tasting Notes
A leaner, rarer face of Saint-Aubin’s crown jewel - just two barrels made.

Scarcity in Every Sip
2021 brought a cooler, smaller harvest to Burgundy, and this wine reflects the vintage’s taut, racy style. Expect citrus zest, subtle nuttiness, and a chiselled mineral line that speaks clearly of this windswept, stony site. Less exuberant than warmer years, but captivating in its restraint. A wine for those who love precision and rarity.

The Plot
Les Murgers des Dents de Chien sits just above Montrachet Grand Cru, blessed with sun but moderated by altitude and wind. Its name tells the story: “murgers” are the heaps of sharp stones cleared for planting, jagged like “dog’s teeth.” Philippe farms a mere 0.17 ha here, planted in 1985, normally yielding around 1,300 bottles. In 2021, only two barrels were made - 600 bottles.
Technical Details
Hand-harvested Chardonnay, whole-bunch pressed, fermented in tank before finishing in barrel. 11 months in 228L oak barrels (30% new), 16 months’ élevage total. Bottled by hand using the traditional chèvre à deux becs.

Discover Their Story
A historic domaine in the heart of Puligny-Montrachet, crafting wines from some of the most legendary vineyards on earth.
The Chavy name rings out across Burgundy, synonymous with classically brilliant white wines. Philippe took the reins in 1990, inheriting Puligny parcels from his father (planted in the 1950s) and Meursault from his mother (going all the way back to 1932), with one of Saint-Aubin’s most iconic plots thrown into the mix.
Our Take
A wine of unmistakable class that lives up to the brilliance of its name, Les Murgers des Dents de Chien. Perched just above the hallowed slopes of Montrachet Grand Cru, it offers a tantalising taste of the greatness below, yet has no need to stand in anyone’s shadow. A team favourite through and through.
