There is an immediate sense of class here. White flowers and a cool, stony minerality lift the nose, before layers of confit lemon, toasted citrus and a gently grilled character begin to unfold.
The palate is beautifully poised. There is concentration and substance, but nothing feels static or heavy; the wine builds as it moves through the mouth, becoming more intense and complete towards the finish.
And that finish is the defining feature. Supreme length. The citrus and mineral character seem to keep going long after the wine has left the palate, with freshness and precision holding everything perfectly in place.
A tiny-production Puligny from an extraordinary position, with intensity, poise and quite remarkable persistence. Just incredible, as Rue Rousseau so often is.

The Plot
At just 0.23 ha, Chavy’s holding is tiny, planted in 1955 and 1980. Clay-rich soils at the lower end give fruit generosity, while limestone at the top edge adds drive and definition. Production rarely exceeds 1,600 bottles - scarcity that adds to the allure.
Technical Details
Hand-harvested Chardonnay, whole-bunch pressed, fermented in tank before finishing in barrel. Aged 11 months in 228L oak barrels (10–20% new), 16 months’ élevage in total.

The Chavy name rings out across Burgundy, synonymous with classically brilliant white wines. Philippe took the reins in 1990, inheriting Puligny parcels from his father (planted in the 1950s) and Meursault from his mother (going all the way back to 1932), with one of Saint-Aubin’s most iconic plots thrown into the mix.
