The Pierrick Bouley Nobody Knew Existed
This is where white Burgundy wanders gloriously off-script. Pierrick describes it as fresh, orange-rosé in colour and particularly suited to spring. The extended skin contact brings a fascinating extra dimension: bright citrus and orchard-fruit freshness meet flashes of apricot skin, red fruit, gentle spice and a subtle, tea-like grip.
It has the energy of a white, some of the structure of a very light red and the savoury texture of a carefully made orange wine. Most importantly, it remains clean, precise and recognisably Pierrick Bouley rather than veering into anything heavy, oxidative or aggressively funky.

The Plot
From vineyards around Volnay planted in 100% Chardonnay on clay & limestone terroir.
Technical Details
The grapes were completely destemmed before beginning a two-week fermentation and maceration in stainless-steel vats using native yeasts.
During fermentation, Pierrick carried out a pump-over every two days but performed only two punch-downs in total. This relatively gentle extraction draws colour, aroma and texture from the skins without overwhelming the wine with tannin.
After maceration, the wine was pressed and transferred to oak for ageing.
The result sits somewhere between white, rosé and orange wine: dry, fresh and brightly coloured, with greater texture and grip than a traditionally vinified Chardonnay.

Each bottle is wrapped in tissue before being carefully placed into our specially imported Italian boxes, tested to rigorous standards. We have literally dropped them from the first storey of our house. All our packaging is paper-based and recyclable.
