Adrien calls this his Grand Cru. Officially, it’s a Chambolle-Musigny Village, but there’s absolutely nothing ordinary about Les Creux-Baissants. Produced from 80-year-old vines on a challenging limestone hillside, this extraordinary parcel is cultivated entirely by horse and hand, without conventional machinery.
The 2024 is vinified with 100% whole bunches, producing a wonderfully complex Pinot Noir with beautiful blackcurrant and cherry fruit, delicate herbal notes and an intoxicating suggestion of black pepper and clove. A wine of remarkable elegance and character, with every single bottle individually numbered. Something very special indeed.
Floral and silky, with blackcurrant, cherry, violet, black pepper, clove, and a fresh mineral edge.
“Excellent wines from small producers which you can’t find elsewhere.”

Verified Reviewer“Great wines, very reasonably priced, and customer service is excellent.”

Tasting Notes
Adrien's own 'Grand Cru'. 80-year-old vines, worked entirely by horse and hand. 100% whole bunches. Every bottle individually number

Adrien Guyon considers Les Creux-Baissants his Grand Cru. And once you understand the extraordinary care lavished upon this tiny parcel, it's not difficult to understand why.
Perched on the slopes of Chambolle-Musigny, its 80-year-old vines grow on challenging limestone terrain, cultivated entirely by horse and hand. Not a single tractor in sight. An extraordinary commitment to a village-classified vineyard.
The 2024 is equally fascinating in the cellar, with Adrien choosing 100% whole-bunch fermentation. The resulting wine is beautiful, combining rich blackcurrant and cherry fruit with delicate herbal notes, black pepper and clove. There's wonderful complexity here, yet everything remains remarkably elegant and refined.
And perhaps my favourite detail? Every bottle is individually numbered.
A rather special Chambolle-Musigny, and a wonderful demonstration of just how seriously Adrien takes this remarkable vineyard.

The Plot
Les Creux-Baissants is an exceptional village-classified parcel on the slopes of Chambolle-Musigny, situated not far from Les Dorlottes. Its approximately 80-year-old Pinot Noir vines grow on complex, challenging terrain over Comblanchien limestone, a geological foundation associated with some of Burgundy's most celebrated vineyards.
The difficulty of working these slopes makes conventional mechanisation impractical. Instead, Adrien cultivates the entire parcel using a horse, with the remaining vineyard work carried out by hand. This labour-intensive approach reflects the exceptional importance he places on Les Creux-Baissants, a vineyard he personally considers worthy of Grand Cru status.
Technical Details
Produced from 100% Pinot Noir, sourced from approximately 80-year-old vines and harvested entirely by hand. For the 2024 vintage, Adrien employs 100% whole-bunch fermentation, retaining all the stems during vinification. Fermentation takes place using indigenous yeasts, with daily punch-downs (pigeage) and pump-overs (remontage) throughout an approximately three-week maceration. The wine is then devatted and undergoes maturation in oak barrels. Each bottle is individually numbered, reflecting the particularly special nature of this cuvée.

Discover Their Story
After nearly 20 years of silence, Domaine Modot-Guyon et Fils is back. Revived in 2023 by Adrien Guyon with a gunshot and a mission.
From old-vine Aligoté to whole-cluster Chambolle-Musigny, these are bold, no-compromise wines from a cellar reborn.
Unfined, unfiltered, and full of intent.
Our Take
“Horse-ploughed. Whole-bunched. Single Vineyard.”
The care and precision Adrien puts into this tiny parcel is remarkable and the result is absolutely mind-blowing. He’s just 23, and this is his first vintage, yet the wine has the confidence and character of someone twice his age. It bursts with blackcurrant and cherry, with violets and floral lift on the nose and a savoury flicker of smoked meat running underneath. We’ll be keeping a few cases of this for ourselves! It’s already stunning to drink now, but the potential here is incredible. This could easily become a future collector’s favourite.
