Savagnin, but stripped back. No veil. No oxidation. Just fruit, place, and precision.
Le Châtaignier sits mid-slope on a steep, west-facing parcel in Rotalier. Limestone and marl underfoot. Vines planted in 1959, now reaching deep and delivering something far more serious than you might expect.
The nose pulls you straight in. Gunflint, white flowers, a cool mineral edge. There’s intensity here that feels almost Burgundian, but wilder, less polished. More raw, more alive.
On the palate, it opens, then tightens again. Broad at first, then drawn into a fine, chiselled line. Full and layered, yet always held in check by a driving freshness. Crisp, saline, beautifully structured. Depth, but with lift. Energy without weight.

The Plot
Le Châtaignier lies in Rotalier in the southern Jura, planted mid-slope on a steep, west-facing site. The soils are classic for the region, limestone and marl, giving both structure and salinity. With vines dating back to 1959, the roots run deep, drawing out concentration, minerality, and a clear expression of place.
Technical Details
100% Savagnin from organically farmed vines planted in 1959 in Rotalier in the Jura, rooted in limestone and marl soils. Although grown in Jura, the wine is made in Meursault and bottled as Vin de France, allowing complete freedom in style.
In the cellar, the approach mirrors his whites. Whole bunches are pressed long and firmly to extract maximum lees, with controlled oxidation only at this early stage. Fermentation takes place in custom 456-litre barrels for both alcoholic and malolactic fermentation, minimising oak influence and focusing on purity. From pressing to bottling, the wine is protected with nitrogen, preserving freshness, tension, and that signature lift.

The story begins in 2017. At just eighteen years old, Pierre-Vincent Girardin founded his own domaine, working with a handful of exceptional vineyard parcels retained from his family’s historic holdings.
Raised in Meursault and shaped by generations of Burgundian winemaking, he works organically in the vineyards and has rapidly forged a style defined by purity, precision and energy. Already being compared to Coche-Dury & Pierre-Yves Colin-Morey, from the first taste, it’s clear why.

Each bottle is wrapped in tissue before being carefully placed into our specially imported Italian boxes, tested to rigorous standards. We have literally dropped them from the first storey of our house. All our packaging is paper-based and recyclable.
