Philippe Chavy works some of the finest sites in the Côte de Beaune, with a focus on Puligny-Montrachet and its surrounding villages. Many of his vines are old, some planted as far back as the 1920s, and farmed with long-standing organic and biodynamic principles.
He moved away from herbicides and insecticides long before it became fashionable, focusing instead on healthy soils and living vineyards.
Perhaps most telling of all, Philippe hand-bottles every single wine himself. A rare practice in Burgundy today, and one that speaks volumes about the level of precision and care that goes into each cuvée.
