Tasting Notes

Flint, flowers, and citrus - a chiselled, mineral-driven white Burgundy that sets the palate alight.

‘Les Monsnières’ Côtes de Beaune

Strike of Flint

This wine crackles with tension. Flint and stony minerality shoot through ripe lemon and lime, softened by honeysuckle and elderflower lift. A whisper of brioche rounds the edges, but the core stays pure, taut, and chiselled - a white Burgundy with spark and bite.

The Plot

Les Monsnières lies on a stony hillside in the Côtes de Beaune, where thin, limestone-heavy soils push Chardonnay into its most mineral register. With vines ranging from 30 to 50 years old, this site yields wines that are structured, perfumed, and enduringly complex.

Technical Details

Manual harvest on September 18, followed by a gentle 3–4 hour press and natural settling by gravity. Native yeasts carried the fermentation, and the wine aged for 12 months entirely in one-wine oak barrels. The result is a Chardonnay of aromatic depth and flinty precision.

Discover Their Story

Ex Nihilo

Founded by Morgane and Alban Desazars, this young house brings Champagne polish to Côte d’Or terroir.

They may be recent arrivals, but their journey runs deep. Alban works directly in the vines, guiding the raw material from soil to cellar. Morgane brings sharp vision and precision. Together, they craft single-plot wines with patience, instinct, and a touch of daring – miniscule volumes, but big character.

Yes, especially if you enjoy youthful, vibrant Burgundy. It has plenty to give now, but there is more to come with a little time in bottle.

Should I buy one bottle or a few?

One to try, three if you want to follow it over time, six if you already know the producer or style. Burgundy moves quickly, and small parcels rarely hang around for long.

Each bottle is wrapped in tissue before being carefully placed into our specially imported Italian boxes, tested to rigorous standards. We have literally dropped them from the first storey of our house. All our packaging is paper-based and recyclable.

Can I send it as a gift?
