About this Wine
Simon called the grapes “like caviar.” Adele was grinning. And honestly? We were too. This Aux Herbues is perfume in motion—rose, violet, lavender and spice, all carried on silky tannins and fresh red fruit. It’s Nuits-Saint-Georges, but not as you know it: lifted, elegant, and just a little bit heady. A wine to fall for, hard.

Aux Herbues is one of those wines that just feels alive. Grown on marl-limestone soils in the village of Nuits-Saint-Georges, it brings together the deep structure the appellation is known for with an unexpectedly floral, expressive edge. The plot borders Vosne-Romanée, and while the finesse is there, this is pure, characterful Nuits, lifted, elegant, and deeply satisfying.

100% Pinot Noir. 30% whole bunch. 5-day cold maceration at 8°C. Medium extraction: 4 punch-downs, mostly pumpovers. Aged 12 months in oak (30% new). No filtration. 2,000 bottles + 30 magnums produced.

Each bottle is wrapped in tissue before being carefully placed into our specially imported Italian boxes, tested to rigorous standards. We have literally dropped them from the first storey of our house. All our packaging is paper-based and recyclable.
