About this Wine

Beautiful was the word I wrote down when tasting this. White flowers and bright citrus lead into a wonderfully textural palate, with real depth, freshness and a long mineral finish. A Bourgogne Chardonnay that punches considerably above its level. Philippe made 50% less of this in 2024, so there is little to go around.

A Bourgogne with serious ambition: white flowers, citrus, gorgeous texture and a finish that goes on far longer. A baby Puligny.

Bourgogne Chardonnay

There’s a lovely combination of beauty and substance here.

White flowers immediately lift the nose, followed by lemon zest and fresh green apple, with a subtle herbal note adding another layer of interest. The palate has considerably more depth and texture than you might expect from Bourgogne Chardonnay, with a gentle richness and touch of brioche wrapped around bright, refreshing acidity.

Jasper Morris described the 2024 as “very classy”, highlighting its good acidity and notably long finish, and that length was one of the things that really stood out to me too.

It’s beautifully balanced: floral and fresh at first, then broader and more textural through the middle, before that clean mineral character pulls everything back into focus.

The Plot

A blend of three Puligny parcels – L’Ormeau, Femelottes and Les Bergerie – covering 1.4 hectares. Vines span decades, with plantings back to 1959 bringing extra depth and character. Clay-limestone soils and hand harvesting ensure purity, while stainless steel fermentations and 11 months in seasoned oak barrels keep the fruit crisp, vibrant and mineral-driven.

Technical Details

Whole bunch pressed, fermented in tank, and finished in older 228L barrels (5–10 years old). Aged 16 months in total, bottled after racking and blending in stainless steel.

The Chavy name rings out across Burgundy, synonymous with classically brilliant white wines. Philippe took the reins in 1990, inheriting Puligny parcels from his father (planted in the 1950s) and Meursault from his mother (going all the way back to 1932), with one of Saint-Aubin’s most iconic plots thrown into the mix.
