About this Wine
From vines planted as far back as 1939 within Puligny-Montrachet, immediately enticing, with fresh lemon tart, a delicate touch of chamomile and just enough creaminess to give it beautiful texture. Bright, precise and ridiculously moreish. I barely took a tasting note because I was too busy enjoying it. Philippe lost 40% of his production in 2024 due to the weather, so it’s a rarer wine than ever in this spectacular vintage.

Tasting Notes
Old-vine Aligoté from Puligny-Montrachet, bursting with fresh lemon, fine minerality and a beautifully subtle creamy edge.
This was one of those wines where my tasting notes suffered because I was too busy enjoying the glass.
The nose is immediately enticing, like a fresh lemon tart, with a delicate hint of chamomile sitting behind it. There’s lovely ripeness to the fruit, but everything remains bright and precise, with a little creaminess from the barrel giving texture without taking away from the freshness.
What really makes it is the balance. Pure citrus fruit, fine minerality, just enough richness and a finish that keeps pulling you back for another sip. Jasper Morris picked up on the same combination of ripe fruit, elegance and a little cream from barrel.
For me, this is exactly what great Aligoté should be: full of energy, character and sheer drinking pleasure.
My personal favourite Aligoté - Ben.

The Plot
Philippe sources this from vineyards within Puligny-Montrachet itself, including remarkably old vines planted in 1939, with further parcels dating from 1947.
They are rooted in Puligny’s classic clay and limestone soils, giving what can be a relatively simple appellation a far more interesting foundation. These old vines naturally produce small quantities of concentrated fruit, and in the already difficult 2024 vintage, Philippe lost around 40% of his usual production.
Technical Details
The grapes are hand-picked before a long 16-month élevage, with no new oak used.
That élevage brings a subtle creamy texture and rounds out the naturally bright acidity of Aligoté without masking the fruit. The result is fresh and precise rather than lean, with plenty of energy, but enough texture and ripe fruit to make it immediately delicious.

The Chavy name rings out across Burgundy, synonymous with classically brilliant white wines. Philippe took the reins in 1990, inheriting Puligny parcels from his father (planted in the 1950s) and Meursault from his mother (going all the way back to 1932), with one of Saint-Aubin’s most iconic plots thrown into the mix.
