Tasting Notes
Barely 300 bottles of perfumed, silky Pinot. Pure pleasure from the very first glass.

The first thing that hits you is the perfume. Cherry and strawberry rise immediately from the glass, joined by that unmistakable winter-spice character of clove and freshly cracked black pepper.
Everything about it feels delicate and beautifully judged. The fruit is vivid rather than heavy, the spice sits quietly underneath, and there’s a softness and purity that makes it incredibly easy to fall for.
There are wines you analyse, and wines you simply want another glass of. This is very much the latter. Pretty, fragrant and completely charming, it is already drinking beautifully and feels made for immediate enjoyment.

The Plot
The Pinot Noir comes from En Malpertuis in Couchey, just north of Fixin, from the very same vineyard that produces Simon and Adèle’s Coteaux Bourguignons Chardonnay.
The difference is where the vines sit. The Pinot occupies the stonier upper part of the vineyard, while the Chardonnay grows lower down on the richer soils.
The parcel was planted in 1981 and covers only 0.049 hectares, around 490m². Clay-limestone and silty soils run through the site, but the higher position of the Pinot brings a greater proportion of stone and naturally gives the wine a more delicate, lifted character.
It is a microscopic parcel, and in 2024 it produced just 301 bottles.
Technical Details
The Pinot Noir was harvested by hand on 21 September 2024 and completely destemmed.
The fruit underwent an eight-day pre-fermentation period at 8°C, followed by an extremely gentle extraction. Simon and Adèle used just two light punch-downs, relying mainly on gentle pump-overs with very little oxygen.
The wine then spent 12 months in 2020 oak barrels before being racked from the bottom of the barrel and bottled without filtration.
From just 0.049 hectares, total production was only 301 bottles.
