Tasting Notes
A tiny-production Chardonnay from a single parcel in Couchey, just north of Fixin. Aromatic and precise.

Very aromatic from the off, with fresh pear, green apple, lemon and lime running through the nose. The palate is all about tension: bright citrus, a strong mineral line and a distinctly flinty edge, finishing precise, energetic and seriously refreshing. There’s plenty of fruit here, but it’s the tension and clarity that make it stand out.

The Plot
The Chardonnay comes from “En Malpertuis” in Couchey, immediately north of Fixin. The 0.1787-hectare parcel was planted in 1991 on clay-limestone and silty soils.
Interestingly, both Chardonnay and Pinot Noir are planted within the same vineyard. The reds occupy the stonier upper section, while the Chardonnay sits lower down on the richer part of the slope.
Technical Details
The Chardonnay was hand harvested on 21 September 2024 and pressed as whole bunches in a long, gentle pneumatic press lasting around 2½ hours. After 36 hours of cold settling at 8°C, fermentation took place in stainless steel.
The wine then spent 12 months on its fine lees, with 70% aged in 600-litre demi-muids and 30% in stainless steel, before filtration and bottling. Production was limited to 1,217 bottles.
