This is a tasting case that feels like watching a winemaker think in real time. The Burgundy wines bring that signature Girardin clarity. Clean lines, lifted aromatics, and a kind of quiet intensity that builds rather than shouts. Then the Jura steps in, not as a side note, but as an extension of the same idea. Different soils, same obsession with purity.
The Éclat de Calcaire sets the tone. Bright, mineral, almost electric. Then things widen out. Meursault ‘Le Limozin’ brings texture and depth, layered but still finely cut. The Beaune Premier Cru adds structure, a little more grip, something to hold onto. And then Jura… where Chardonnay and Savagnin take on a slightly different accent. Still precise, still controlled, but with a subtle wild edge that makes you lean in.
This is not a mixed case thrown together. It’s a story. Limestone told from two regions, through one of Burgundy’s most exciting young voices.
The Plot
The Burgundy wines come from some of the Côte de Beaune’s most expressive limestone sites, including Meursault and Beaune Premier Cru vineyards known for their balance of power and precision.
The Jura cuvées come from plots in places like Rotalier, where marl and limestone soils create a different kind of tension. Here, Girardin applies Burgundy winemaking to Jura fruit, avoiding oxidative styles and focusing instead on freshness, purity, and site expression.
Technical
The wines are farmed with organic principles and harvested by hand, with a strong focus on vineyard work driving quality. In the cellar, fermentations are natural and élevage is carefully managed to preserve clarity rather than impose weight.
Across both Burgundy and Jura, the approach remains consistent. Minimal intervention, precise élevage, and a clear intention to let limestone speak first. The Jura wines are vinified in the same non-oxidative style as the Burgundies, creating a rare bridge between the two regions.
