Planted in En Coulézin, a tiny plot at the foot of Volnay, this Aligoté is something special. The vines are 70 years old, the soils a classic mix of marl and clay. Pierrick Bouley handles it with a gentle touch—no sulfur during fermentation, a soft press, and ageing in used barrels to preserve energy and detail.
The result? A vibrant white wine with green apple, lemon, grapefruit, white pepper and zippy freshness. There's also a subtle creaminess and roundness from lees ageing that balances the zip, along with a slightly nutty, coconut edge from the old wood. It's a wine that tastes like it knows exactly what it's doing.

The Plot
En Coulézin is a prized spot just below the village of Volnay. With North–South exposure and 70-year-old vines rooted deep in marl and clay, the balance between freshness and texture is dialled in.
Technical Details
Manual harvest, whole-bunch press, no sulfur at the start of vinification. Cold settling, natural fermentation in vat, then ageing in barrel for 12 months. Light SO₂ added before bottling if needed. 1,200 bottles produced.

Each bottle is wrapped in tissue before being carefully placed into our specially imported Italian boxes, tested to rigorous standards. We have literally dropped them from the first storey of our house. All our packaging is paper-based and recyclable.
