Meet Pierrick Bouley
Pierrick Bouley represents the sixth generation of his family to cultivate vines in Volnay, Burgundy. After studying at the Lycée Viticole de Beaune and gaining experience at Felton Road in New Zealand, Pierrick returned to Volnay in 2009. He took full control of the family estate in 2014, rebranding it from Domaine Reyane & Pascal Bouley to Domaine Pierrick Bouley by the 2019 vintage. The estate spans approximately 9.6 hectares across 41 parcels, many of which are planted with vines averaging 65 years of age .
Vineyard Philosophy: Tradition Meets Innovation
Pierrick is deeply committed to sustainable viticulture, drawing inspiration from organic and biodynamic practices. The estate is in the process of organic certification, with the 2023 vintage set to be the first officially certified. In the vineyards, Pierrick employs the “Guyot-Poussard” pruning technique and practices “tressage,” a method of rolling vine shoots instead of trimming, which promotes better grape balance and disease resistance. He also experiments with permaculture, mowing grass between rows and cultivating only under the vines when necessary .
Winemaking: Minimal Intervention, Maximum Expression
In the cellar, Pierrick adopts a non-interventionist approach to let the terroir shine. Grapes are hand-harvested, sorted, destemmed, and not crushed. Fermentation occurs naturally without added yeasts, enzymes, or bacteria, and since 2017, no sulfur dioxide is added during vinification. The wines are aged for 12 months in French oak barrels, with 20% to 30% being new oak. Notably, since 2019, Pierrick has used steam-heated barrels instead of fire-toasted ones to impart subtle oak influence without overt toastiness .

Domaine Pierrick Bouley produces a range of wines that reflect the diversity of the Côte de Beaune. His portfolio includes several Premier Cru Volnays, such as “Clos des Chênes,” “Champans,” “Ronceret,” and the monopole “Les Grands Champs.” Each wine showcases Pierrick’s commitment to expressing the unique characteristics of each parcel, resulting in wines with refined tannins, balanced acidity, and a pure core of red berries .
