Sous le Parc opens with lemon and tangerine zest, a quiet sweetness of almond and marzipan, and a fine thread of toast from its two years in wood. The palate is pure and mineral, shaped by an incisive line of acidity and a long, orange-oil finish. Fresh, saline, and effortlessly drinkable, it’s Chablis with both charm and precision.

The Plot
A tiny 0.23-hectare parcel at the foot of Béru, planted in 2019 on stony Kimmeridgian soils. The slope’s southwest exposure brings gentle ripeness, while the marl keeps the wine taut and saline. Yields are naturally small, making this one of Jérémy Arnaud’s most limited bottlings.
Technical Details
Hand-harvested Chardonnay from young vines on clay-limestone and Kimmeridgian marl. Natural fermentation, two years’ ageing in wood, bottled unfined and unfiltered. Approx. 1,800 bottles produced.
Discover Their Story
Jérémy Arnaud’s ascent toward Chablis cult status traces back to 1990, when his father planted the family’s first solitary hectare.
Jérémy stepped in with just half a hectare of his own in 2017, and his holdings have since multiplied tenfold, mirroring the speed and certainty of his rise. He stands at the vanguard of a new Chablis generation, rejecting pesticides, harvesting by hand, and ageing in true wooden barrels to craft wines with striking texture, tension and depth.

Each bottle is wrapped in tissue before being carefully placed into our specially imported Italian boxes, tested to rigorous standards. We have literally dropped them from the first storey of our house. All our packaging is paper-based and recyclable.
