Planted in En Coulézin, a tiny plot at the foot of Volnay, this Aligoté is something special. The vines are 70 years old, the soils a classic mix of marl and clay. Pierrick Bouley handles it with a gentle touch—no sulfur during fermentation, a soft press, and ageing in used barrels to preserve energy and detail.
The result? A vibrant white wine with green apple, lemon, grapefruit, white pepper and zippy freshness. There’s also a subtle creaminess and roundness from lees ageing that balances the zip, along with a slightly nutty, coconut edge from the old wood. It’s a wine that tastes like it knows exactly what it’s doing.
📍 The Plot
En Coulézin is a prized spot just below the village of Volnay. With North–South exposure and 70-year-old vines rooted deep in marl and clay, the balance between freshness and texture is dialled in.
🍇 Technical
Manual harvest, whole-bunch press, no sulfur at the start of vinification. Cold settling, natural fermentation in vat, then ageing in barrel for 12 months. Light SO₂ added before bottling if needed. 1,200 bottles produced.
