About this Wine
Fresh lemon and lime run through a beautifully textured palate, with seasoned oak bringing depth without taking away any of its energy. Fine, balanced and remarkably elegant, it finishes with the length and composure of a far more expensive white Burgundy.
This is not sharp, simple Aligoté. It is old-vine fruit from Puligny-Montrachet, treated with real care, and it shows.

Old-vine Aligoté from Puligny-Montrachet. Bright, beautifully textured and far more serious than its label suggests.

Bright lemon, lime and crisp green fruit meet a gentle creaminess from élevage in seasoned oak. There is freshness, but also shape, weight and an almost chalky precision through the centre.
Everything feels beautifully controlled. No hard edges, no excessive richness, just pure citrus fruit, fine texture and a long, elegant finish that keeps drawing you back to the glass.

The Plot
This is produced from very old Aligoté vines, planted in 1939 and 1948.
The fruit comes primarily from Puligny-Montrachet, across two parcels named Corvée aux Moines and Courtis de Mipon. That provenance helps explain why the wine feels so composed and refined, combining Aligoté’s natural brightness with the mineral precision associated with Puligny.
Technical Details
Made from 100% Aligoté and raised in oak barrels, with no new wood used.
The 2023 vintage was bottled at 12% ABV. Production was exceptionally small, with only 1,960 bottles and 15 magnums made.
Philippe recommends drinking it between 2025 and 2028, although its balance and structure should allow it to develop beautifully over the next few years.

A historic domaine in the heart of Puligny-Montrachet, crafting wines from some of the most legendary vineyards on earth.
The Chavy name rings out across Burgundy, synonymous with classically brilliant white wines. Philippe took the reins in 1990, inheriting Puligny parcels from his father (planted in the 1950s) and Meursault from his mother (going all the way back to 1932), with one of Saint-Aubin’s most iconic plots thrown into the mix.

I tasted this at the domaine and knew immediately that I wanted it for us.
It was one of those wines you keep returning to during a tasting. Not because it was the loudest or the most expensive, but because everything simply fell into place. Freshness, texture, precision and a finish that lasted far longer than I expected from Bourgogne Aligoté.
There was just one problem. Philippe had completely sold out.
Every bottle had already been spoken for, so I left Puligny thinking we had missed our chance.
Then came an unexpected message. Another importer from another country had failed to settle their order, and their parcel had been released back to the domaine.
I replied immediately!

Each bottle is wrapped in tissue before being carefully placed into our specially imported Italian boxes, tested to rigorous standards. We have literally dropped them from the first storey of our house. All our packaging is paper-based and recyclable.
