About this Wine
Rosalie is our first ever Burgundy rosé, and it is exactly the sort of bottle that made us want to list one.
Made from 100% Gamay grown in Volnay, this is not a thin, forgettable summer pink. It is bright, crunchy and brilliantly fresh, but with a little extra texture from ageing on Pinot Noir lees from Volnay Premier Cru. Think red berries, cool fruit, a savoury Burgundian line and just enough flesh to make it genuilely useful at the table.
This is rosé with a brain. Chill it, pour it, and treat it like a proper bottle of Burgundy that happens to have blushed.

Tasting Notes
Our first Burgundy rosé. Properly made, Volnay-grown Gamay with Pinot Noir lees and serious wine energy.

Rosalie has all the immediate charm you want from rosé, but none of the laziness. There is a rush of crunchy red fruit, strawberry, raspberry and redcurrant, lifted by a cool, clean snap of freshness. Then comes the clever bit: a soft lick of texture from the Pinot Noir lees, giving it more shape, more savoury depth and much more table appeal than your standard pale-pink poolside number.
It is joyful, yes. But it is also properly made. A rosé for Burgundy drinkers, not just sunshine drinkers.
The Rosé That Came To Dinner
This is where Rosalie really earns its place. It is fresh enough for an aperitif, but it has the grip, shape and appetite to sit with food. Charcuterie, grilled chicken, tomato salads, prawns, salmon, pork, ratatouille, even a bowl of strawberries if you are feeling romantic. It is the bottle you open chilled, then realise halfway through lunch that it has quietly stolen the show.

The Plot
Rosalie comes from two parcels in Volnay, La Grande Corvée and Le Mont Poulain, facing south and south-east on loamy clay soils. The vines are around 35 years old, planted in relatively deep, nourishing ground, giving the Gamay plenty of fruit and generosity while keeping that bright Burgundian freshness.
The name is a neat little wink too. Rosalie comes from “Rosé à Lie”, a nod to the wine being raised on Pinot Noir lees.
Technical Details
The grapes are harvested early in the cool of the morning and brought in without destemming. Maxime uses direct cold pressing, followed by 36 hours of cold settling, before fermentation in stainless steel for 8 to 10 days. The wine is then aged in stainless steel for 6 months, during which it is regularly nourished with Pinot Noir lees to bring texture, aromatic lift and a little extra roundness.
No oak. No gimmick. Just a proper Burgundy rosé with freshness, fruit and intent.

Each bottle is wrapped in tissue before being carefully placed into our specially imported Italian boxes, tested to rigorous standards. We have literally dropped them from the first storey of our house. All our packaging is paper-based and recyclable.
