This Aux Herbues is perfume in motion—rose, violet, lavender and spice, all carried on silky tannins and fresh red fruit. It’s Nuits-Saint-Georges, but not as you know it: lifted, elegant, and just a little bit heady. A wine to fall for, hard.

Aux Herbues is one of those wines that just feels alive. Grown on marl-limestone soils just outside the village of Nuits-Saint-Georges, it brings together the deep structure the appellation is known for with an unexpectedly floral, expressive edge. The plot borders Vosne-Romanée, and while the finesse is there, this is pure, characterful Nuits—lifted, elegant, and deeply satisfying.

The Plot

North-facing parcel on marl-limestone soils. 45-year-old vines. East exposure catches the morning sun and preserves freshness and tension.

Technical

100% Pinot Noir. 30% whole bunch. 5-day cold maceration at 8°C. Medium extraction: 4 punch-downs, mostly pumpovers. Aged 12 months in oak (30% new). No filtration. 2,000 bottles + 30 magnums produced.

Adèle and Simon trained in Beaune, cut their teeth with icons like Groffier and Drouhin, and came home to Fixin to revive old family vines.

Now they’re bottling tiny, thrilling cuvées that fuse deep roots with fearless ambition.
