Aux Herbues is one of those wines that just feels alive. Grown on marl-limestone soils just outside the village of Nuits-Saint-Georges, it brings together the deep structure the appellation is known for with an unexpectedly floral, expressive edge. The plot borders Vosne-Romanée, and while the finesse is there, this is pure, characterful Nuits—lifted, elegant, and deeply satisfying.
Simon called the grapes “like caviar.” Adele was smiling ear to ear. The perfume alone had everyone in the cellar swooning.
The Plot
North-facing parcel on marl-limestone soils. 45-year-old vines. East exposure catches the morning sun and preserves freshness and tension.
Technical
100% Pinot Noir. 30% whole bunch. 5-day cold maceration at 8°C. Medium extraction: 4 punch-downs, mostly pumpovers. Aged 12 months in oak (30% new). No filtration. 2,000 bottles + 30 magnums produced.
