Jérémy Arnaud

Jérémy Arnaud’s ascent toward Chablis cult status traces back to 1990, when his father planted the family’s first solitary hectare. Jérémy stepped in with just half a hectare of his own in 2017, and his holdings have since multiplied tenfold, mirroring the speed and certainty of his rise. He stands at the vanguard of a new Chablis generation, rejecting pesticides, harvesting by hand, and ageing in true wooden barrels to craft wines with striking texture, tension and depth.

Soft Oak, Bright Fruit, Long Finish

Les Veuillots Bois opens with pear, peach, green grass and a gentle warmth of toasted bread. The oak is subtle, framing the fruit rather than covering it. On the palate, the wine is smooth, vibrant and finely poised, lifted by lively acidity and finishing with impressive persistence. It delivers clarity, balance and a softly textured charm all its own.

The Plot

A high-altitude, south-facing site above Tonnerre, planted in 2019 on rocky clay-limestone. Les Veuillots produces three distinct élevages; Bois is the oak-aged interpretation, shaped by the slope’s brightness and the vineyard’s natural freshness.

Technical

Hand-harvested Chardonnay. Natural fermentation. Élevage in oak barrels (mostly François Frères, one to five years old). Bottled unfined and unfiltered.

Chablis is a jewel of Burgundy, renowned for its crisp, mineral-driven white wines made exclusively from Chardonnay.
