Tasting

Notes

A luminous, saline Chablis from one of the region’s rising cult names. Citrus zest, pear and a gentle toastiness move with clarity and precision, wrapped around a pure mineral core. Production from this young micro-parcel is minute, and the wine feels every bit as focused and expressive as its origins suggest.

Discover their Story

Jérémy Arnaud

Jérémy Arnaud’s ascent toward Chablis cult status traces back to 1990, when his father planted the family’s first solitary hectare. Jérémy stepped in with just half a hectare of his own in 2017, and his holdings have since multiplied tenfold, mirroring the speed and certainty of his rise. He stands at the vanguard of a new Chablis generation, rejecting pesticides, harvesting by hand, and ageing in true wooden barrels to craft wines with striking texture, tension and depth.

A Chablis of Salt-Light and Quiet Warmth

Sous le Parc opens with lemon and tangerine zest, a quiet sweetness of almond and marzipan, and a fine thread of toast from its two years in wood. The palate is pure and mineral, shaped by an incisive line of acidity and a long, orange-oil finish. Fresh, saline, and effortlessly drinkable, it’s Chablis with both charm and precision.

The Plot

A tiny 0.23-hectare parcel at the foot of Béru, planted in 2019 on stony Kimmeridgian soils. The slope’s southwest exposure brings gentle ripeness, while the marl keeps the wine taut and saline. Yields are naturally small, making this one of Jérémy Arnaud’s most limited bottlings.

Technical

Hand-harvested Chardonnay from young vines on clay-limestone and Kimmeridgian marl. Natural fermentation, two years’ ageing in wood, bottled unfined and unfiltered. Approx. 1,800 bottles produced.

Vineyard Chablis

Vineyard Chablis

8,321 Acres Farmed

Chablis is a jewel of Burgundy, renowned for its crisp, mineral-driven white wines made exclusively from Chardonnay. These wines are celebrated for their purity and freshness, often featuring notes of green apple, citrus, and white flowers, underpinned by a signature flinty minerality, attributed to the region’s unique Kimmeridgian limestone soils.

Located in the northernmost part of Burgundy, Chablis enjoys a cooler climate, which preserves the natural acidity of the grapes and gives the wines their racy, vibrant character. Unlike many other white Burgundies, Chablis often sees little to no oak aging, allowing the terroir’s essence to shine through with remarkable clarity.

The region is home to a hierarchy of vineyards, from the approachable Petit Chablis to the village-level Chablis, and the more complex and age-worthy Premier and Grand Cru wines. Each tier offers a distinct expression of the region, yet all share the unmistakable elegance and precision of Chablis.

Known as the ultimate food wine, Chablis pairs beautifully with seafood, shellfish, and creamy dishes, making it a favourite among sommeliers and wine enthusiasts worldwide. Its timeless appeal and ability to express terroir make Chablis a cornerstone of Burgundy’s winemaking heritage.
