Jérémy Arnaud’s ascent toward Chablis cult status traces back to 1990, when his father planted the family’s first solitary hectare. Jérémy stepped in with just half a hectare of his own in 2017, and his holdings have since multiplied tenfold, mirroring the speed and certainty of his rise. He stands at the vanguard of a new Chablis generation, rejecting pesticides, harvesting by hand, and ageing in true wooden barrels to craft wines with striking texture, tension and depth.

His formative years carried him through Meursault, Beaune, Pauillac and, inevitably, back home to Chablis, shaping a philosophy anchored in restraint. Let the soils speak, let the grapes lead. Natural yeasts and minimal intervention, in the purest sense. Now stewarding vines from Bourgogne through to Chablis Premier Cru, Jérémy bottles wines that feel both elemental and exceptional.
Jérémy is a one-man whirlwind, tending five hectares with the intensity of an entire crew.

In the Vineyards
Allow the terroir to speak
Jérémy farms his vineyards with an intensity that feels almost meditative. Working entirely on his own, he tends each parcel by hand, pushing quality through meticulous canopy work, low intervention choices and an unwavering refusal to compromise. Herbicides and pesticides have no place in his fields. Instead, he relies on soil life, biodiversity and the natural rhythm of the seasons to guide his decisions. Harvesting is done by hand to protect purity and tension, and each plot is treated as its own small universe. His approach is simple in theory but demanding in practice: nurture the vines, respect the land, and let the character of Chablis speak without distortion.
In the Winery
The long view
In the cellar, Jérémy follows a philosophy of gentle guidance rather than control. Native yeasts lead the fermentations, each cuvée allowed to speak in its own cadence. His élevage is patient and textural, split between tank and barrel, with long ageing on the lees (2 years) to build depth without weight. Everything is done by hand: racking, bottling, the small but decisive steps that define an artisan’s signature. Since 2022, he has worked in a winery of his own, complete with temperature control, giving him the precision to refine what nature has already shaped. The result is a range that continues to expand in ambition, including new lieu-dit bottlings and the promising, hard-won Bourgogne Tonnerre. These are wines of tension, mineral clarity and personality, made by someone charting his own course in Chablis.

Chablis is too often dismissed as the midweek standby, a glass poured without a second thought. Treating it that way misses the point entirely because few regions on Earth can thrill quite like this one when given the chance.
Jérémy refuses to rush what nature gives him. His Chablis rests a full two years on its lees, gathering texture, intensity and that lingering, mouthwatering finish that feels worlds away from the brisk, forgettable versions many people know. It’s no surprise that his name is already being whispered alongside the region’s most revered growers.
