Notes

Maison Les 4 Lunes’ Instinct Calcaire is a finely tuned Bourgogne Chardonnay from limestone terroirs near Saint-Aubin. Limestone’s Whisper, Chardonnay’s Voice

From the first swirl, Instinct Calcaire hums with white flowers, ripe nectarine, and a nutty undertone that hints at hazelnut and brioche. The palate is silky, subtly toasty, and shaped by limestone’s precision — a perfect play of generosity and restraint. It’s the kind of Chardonnay that lingers with quiet authority, yet charms with easy deliciousness.

📍 The Plot

The fruit comes from limestone terroirs around Saint-Aubin, close to the Château. The soils deliver freshness and finesse, while vinification in 350L barrels for 12 months (15% new oak) adds just the right seasoning of toast and roundness. A short two-month rest in stainless steel sharpened the wine’s edges without muting its breadth. Richard and Guillaume of Maison Les 4 Lunes call this cuvée exactly what they hoped for — a clear vision of Burgundian Chardonnay.

🍇 Technical

Fermented and aged 12 months in 350L oak barrels (15% new), then refined for 2 months in stainless steel. Only 2509 bottles produced. Straw yellow in the glass with notes of toast, hazelnut, popcorn, and peach. A round yet mineral wine with understated oak — structured for drinking now or a few years’ cellar rest.

Bourgogne, the broadest appellation in Burgundy, offers a diverse introduction to the region’s rich winemaking heritage. Spanning a wide range of terroirs, from the rolling hills of the Côte d'Or to the cooler northern vineyards, Bourgogne produces both red and white wines, with Pinot Noir and Chardonnay at the forefront. The reds are characterised by fresh red fruit flavours, smooth tannins, and earthy undertones, while the whites are marked by bright acidity, crisp minerality, and notes of citrus and green apple.

The wines from Bourgogne come from vineyards with varying soil types, including limestone, clay, and marl, which help to express a true sense of place. Burgundy’s temperate climate, with a balance of sun and rain, allows the grapes to ripen slowly, resulting in wines with both freshness and complexity. The region’s varied terroirs and microclimates contribute to a fascinating range of wine styles, making Bourgogne an ideal starting point for exploring the diversity of Burgundy’s wines.

With a long history at the heart of Burgundy’s winemaking tradition, Bourgogne wines are often the first step on a Burgundy journey. These wines offer approachable yet authentic expressions of the region’s key varietals, providing excellent value while showcasing Burgundy’s terroir. Whether for newcomers or seasoned wine enthusiasts, Bourgogne wines are a perfect introduction to the complexity and charm of the region.

The Bourgogne appellation embodies the essence of Burgundy, where passion, tradition, and craftsmanship come together to create wines that are both accessible and full of character. Whether enjoyed young or with some bottle age, Bourgogne wines offer a true taste of the region’s celebrated winemaking culture.
