The Crown Jewel of Saint-Aubin
If Saint-Aubin has a king, it’s Les Murgers des Dents de Chien. Perched just above the great Montrachet hillside, with perfect southern exposure yet a cool, windy edge, it delivers wines of precision, minerality, and tension. Chavy’s 2023 brims with lime and peach, flinty smoke, and white pepper spice – rich on the palate but etched with laser-cut freshness. With only 1,300 bottles made, it’s as rare as it is dazzling.
📍 The Plot
“Murger” refers to the piles of sharp stones cleared from the rocky soils; “Dents de Chien” means dog’s teeth, a nod to their jagged bite. The vineyard sits high on the slope above En Remilly and east of Montrachet, soaking up the sun but kept in check by the altitude and winds, maintaining freshness and tension.. The terroir here is a mix of clay & limestone. Philippe farms a tiny 0.17 ha parcel, planted in 1985, making him one of the smallest holders in this prized site.
🍇 Technical
Hand-harvested Chardonnay, whole-bunch pressed, fermented in tank before finishing malolactic in barrel. Aged 11 months in 228L oak barrels, 30% new, then blended and bottled by hand using the traditional chèvre à deux becs. 16 months’ élevage in total. Just 1,300 bottles.
