Scarcity in Every Sip
2021 brought a cooler, smaller harvest to Burgundy, and this wine reflects the vintage’s taut, racy style. Expect citrus zest, subtle nuttiness, and a chiselled mineral line that speaks clearly of this windswept, stony site. Less exuberant than warmer years, but captivating in its restraint. A wine for those who love precision and rarity.
📍 The Plot
Les Murgers des Dents de Chien sits just above Montrachet Grand Cru, blessed with sun but moderated by altitude and wind. Its name tells the story: “murgers” are the heaps of sharp stones cleared for planting, jagged like “dog’s teeth.” Philippe farms a mere 0.17 ha here, planted in 1985, normally yielding around 1,300 bottles. In 2021, only two barrels were made – 600 bottles.
🍇 Technical
Hand-harvested Chardonnay, whole-bunch pressed, fermented in tank before finishing in barrel. 11 months in 228L oak barrels (30% new), 16 months’ élevage total. Bottled by hand using the traditional chèvre à deux becs.
